Chicken Stir Fry
2 cups of water
1 cup of short grain organic brown rice
2 TBSP Olive Oil
¼ cup diced Organic Red Onion
San-J Reduced Sodium Gluten Free Soy Sauce
½ of an Organic Cauliflower
½ of an Organic Broccoli
½ of an Organic Carrots
2-3 boneless, skinless chicken breast
1 can of Organic Chunks of Pineapple (optional)
Bring 2 cups of water to a boil in a saucepan. Add 1 cup of brown rice. Cover pan and cook until all water has been soaked into rice. Approximately 30-40 minutes.
In a frying pan, sauté onion in olive oil. Slice chicken into chunks in a bowl. Pour Soy Sauce overtop of the chicken and let sit while you slice veggies. Once sliced, steam all veggies. Add Chicken to the onion and olive oil mixture. Saute until chicken is thoroughly cooked. Add veggies in and stir. Reduce heat and cover stirring occasionally.
Once veggies reach desired level of crunchiness or softness, remove from stove. Serve over brown rice.
