Glacken Health Chocolate Muffin

Glacken Health Chocolate Muffin

Ingredients:
14 dates, finely chopped
1 cup King Arthur’s White Whole Wheat
¼ cup Shaklee Instant Soy Protein Mix
½ cup Organic Cacao Powder
2 TBSP Chia Seeds
½ tsp sea salt
1 tsp baking powder
1 tsp baking soda
2 egg whites
½ cup Organic unsweetened applesauce
1 ½ TBSP Organic Buttermilk Blend powder mixed with ½ cup water (or ½ c buttermilk)
3 TBSP local honey
1 tsp organic real vanilla
1 cup hot coffee

Directions:
Preheat the oven to 350 degrees. Grease muffin tins (I use the 12 large –you could make the mini muffins, too.)

In one bowl, remove pits and finely chop dates. Continue to chop until they are starting to stick together in a ball. In a separate large bowl, combine flour, cacao powder, chia seeds, salt, baking powder, and baking soda. Add egg whites, applesauce, buttermilk blend mixture, honey, vanilla, and chopped dates. Thoroughly combine until dates are distributed throughout the mixture. (This is tricky since the dates want to stick together!) Add hot coffee and thoroughly combine. Batter will be quite thin—this is exactly how you want it.

Fill muffin tins ¾ full of batter. Bake for 30 minutes or until inserted toothpick comes out clean. Let stand for 5-10 minutes. Remove from muffin tins, place on a wire rack and cool. Serve alone or with fresh raspberries! Delicious.
