Grilled Veggies
Ingredients:
2 TBSP Olive Oil
¼ cup diced Organic Red Onion
1 clove of Organic garlic
½ of an Organic Red, Green, Yellow, or Orange Pepper
½ of an Organic Yellow Summer Squash
½ of an Organic Zucchini
Salt
Pepper
In a frying pan, sauté onion and garlic in olive oil. Slice all veggies. Once onion and garlic are soft, add to olive oil mixture. Reduce heat and cover stirring occasionally. Once veggies reach desired level of crunchiness or softness, remove from stove. I typically cook for about 20 minutes.
