1c mashed pumpkin (I use organic)
½ c oil
½ c honey
2 eggs
½ c Shaklee Instant Soy Protein Mix
3/4 c Whole wheat flour
¼ c unbleached flour
¼ c Shaklee Fiber Plan
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
1/3 c water
Preheat oven to 350 degrees. Beat the oil and honey together in a bowl. Add the eggs and mix well. Combine the dry ingredients in another bowl. Add dry ingredients and water to the honey mixture. Mix in pumpkin. Grease 9x5x3’ loaf pan. Pour in the batter. Bake for 1 hour. Remove pumpkin bread when a toothpick can be inserted and removed cleanly. Place on a cooling rack for approximately 15 minutes before inverting to take it out of the pan.
