Ingredients:
- 3-4 chicken breasts
- 14.4 oz can organic diced tomatoes
- 15 oz can organic Aduki Beans (no salt added) **substitution: black or kidney beans
- 15 oz can organic corn (no salt added)
- 16 oz can organic, free range chicken broth (Pacific Brand or Shelton’s I use)
- 1 tsp minced garlic
- 1 tsp onion salt
- 1 tsp pepper
- salt to taste (if needed)
Directions:
Combine chicken broth, beans, corn, tomatoes, minced garlic, onion salt, pepper and salt in the crock pot. Lay the chicken breast on top and close the lid. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in; salt and season to taste. Serve over brown rice. If you like, you can top with shredded cheese.
